The brownish, thin seed coat protects the kernel. It gives the almond a stronger taste. The almond skin is rich in fibre and contains important trace elements. These are mainly magnesium, calcium, potassium and phosphorus. Important antioxidants and flavonoids are also added to the almond skin. It contains the so-called secondary plant substances which ensure that the health benefits of the almonds are unfolded. This composition of minerals, vitamins and the secondary plant substances is said to have a positive influence on the human metabolic process. The dietary fibres of the brown skin can support digestion and thus also contribute to a healthy diet.
Almonds with their brown seed skin are used everywhere where the stronger colour and the typical taste of the nut fruit with its skin is appreciated. savory biscuits and savory cakes tolerate the heartiness of almonds with peel. Unpeeled almonds give the food its typical “nutty” appearance during further processing. The seed skin gives the biscuits good stability and a pleasant bite. When further processed into roasted almonds, coated or chocolated almonds, the unmistakable aroma of the brown skin forms a pleasant contrast to the sweetness of the shell. The almond skin is also an advantage in terms of shelf life. It prevents the kernel from drying out. If necessary, the skin can also be removed later, our whole, brown organic almonds are therefore a popular starting product for any preparation.
