Azuki beans

The wild forms of azuki beans, also called adzuki beans (bot. Vigna angularis), originate from central China, Japan, Korea and Taiwan. It has been known as a useful plant in these regions for more than 2000 years. Azuki beans need sufficient heat to thrive, in a subtropical climate the yield is highest. Azuki beans ripen between September and October. The roundish seeds weigh between 50 and 200 g per thousand gram, depending on variety and growing region. Harvested can be up to 30 decitons per hectare. Like all legumes, azuki beans contribute to soil improvement. The nitrogen bound by them is a natural fertilizer. In addition to food production, the brown beans are used as animal feed. The cut serves as green fodder. Azuki beans are low in fat, whereas their content of proteins, fibre, minerals and vitamins is high. This is why these beans are so popular in vegan, vegetarian and wholefood cuisine. By combining an average of 20 g protein with a good 60 g carbohydrates per 100 g, dishes made from azuki beans provide plenty of food for a long time without straining the organism.

Use

Versatile application ideas come from Japanese cuisine. Azuki beans are also used for desserts in Japan, for example to make jam or together with sticky rice cake for sweet soups. Azuki beans are said to be easier to digest than other beans. In this country they are used in soups and stews, cooked in cold salads, as an ingredient for spreads, spice pastes and as a side dish with fish and meat. Their flour is used to make soups, bread and pastries and even drinks. Organic azuki beans are suitable for growing sprouts. Like other sprouts, they are also eaten briefly in wok, on breads and in salads or serve as decoration for plates and soups. Azukis sprouts can also be pickled. Their use as a snack is interesting. Pippers, candied and chocolate coated make these pulses taste good too.
