In mountainous regions, the tasty, pithy lentils thrive particularly well. Mountain lentils retain their structure and shape even after prolonged cooking. Mountain lentils are considered a satiating, healthy dish. The high protein content and the abundant carbohydrates ensure this. About one third of these carbohydrates are unusable for the body. This is not negative, but on the contrary: as so-called dietary fibres they contribute significantly to the function of our digestion. The fat content of lentils, on the other hand, is low. Organic mountain lentils are rich in minerals. Sodium such as potassium, calcium such as magnesium, as well as phosphorus and iron contribute to a sufficient supply of minerals. The content of fat-soluble vitamin A is also high. In order for the body to be able to completely break it down, it is helpful to enhance the lentil dish with a cold-pressed oil – our cold-pressed kernel and nut oils are ideal. Vitamin A contributes to visual function and counteracts age-related changes in the eyes. It supports the function of our skin and mucous membranes and contributes to healthy cell formation.

Use

Our pithy mountain lentils from Turkey are not only a feast for the palate, but with their brown skin and reddish core they also look good. Therefore, they are particularly suitable for salads where bite firmness and shape are in demand. The classic lentil pot succeeds reliably with mountain lentils, and also for soups – solo or mixed with other legumes – they are a popular ingredient. Together with floury legumes, they form the perfect duo in Bratlingen. Mountain lentils are a savory accompaniment to dark meat and sausage dishes. Our organic mountain lentils go just as well with potatoes, pumpkins and carrots as with leeks, eggplants and peppers. Last but not least, the spicy mountain lentils can be used to conjure up vegetarian spreads that enrich vegan and vegetarian cuisine.
