As with red lentils, the yellow variant is not a special variety, but peeled lentils. Their starting products are brown and green lentils. The yellow lentils probably have their culinary home in India, where they are also used for the well-known dhals. These lentils also have a long tradition in Arab cuisine. Our yellow organic lentils are smaller than the red ones, but have a stronger taste. They have less fibre than unpeeled lentils and are therefore often better tolerated. Due to the absence of the peel, they also have a shorter cooking time, they disintegrate more easily and make lentil dishes creamy. Yellow lentils, like unpeeled lentils, are a good source of protein. The vitamin content is lower than that of unpeeled lentils because some of the important nutrients are found in the shell of lentils. Yellow lentils are suitable for the production of lentil flour, the popularity of which is on the rise. Lentil pasta is appreciated by celiac patients because the lentil flour used for its preparation is gluten-free. Lentil flour gives the pasta an appealing color, which is not present without additives in other gluten-free pasta products such as konjac or rice flour.

Use

In addition to the production of pasta, lentil flour is used as an ingredient for baking mixes. The latest trend is the preparation of snacks from lentils. Chips, crackers or puffed biscuits taste savory and offer variety in the snack bowl. Organic lentils, yellow, as soup or stew are traditionally prepared. Their floury consistency results in a creamy dish that tastes great on its own or together with crunchy lentils all year round. Lentils also taste cold, in salads they are a satiating addition. Lentils have also been known for a long time as an ingredient in rice dishes, curries and vegetables. Yellow lentils can be used to make strong tasting puree. Yellow lentils can be used to make spreads in various flavors. The peeled lentils go well as a side dish with chicken, fish and cooked sausages.
